Chewy Granola Bars

I’ve made a couple of different types of granola bars (see our pumpkin and apple recipes). Neither of them were exactly what I was hoping, while they are both good, I really like granola bars that are more similar to the store-bought Quaker kind. So while it took me awhile to find it, I found a no-bake recipe! (Thanks again to Pinterest.)

No-Bake Chewy Chocolate Granola Bars

1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal*
1/2 teaspoon vanilla
2 tablespoons mini chocolate chips

*I found mine at Trader Joe’s so that they’re HFCS free!


First, mix together your oats and crispy rice. Set aside.Secondly, dump honey, butter and brown sugar into a small pan. Put it on medium high heat and wait for the brown sugar to dissolve and the butter to melt. Once it boils, cook for two minutes. Once done, mix in vanilla.Pour this over your oat and crispy rice mixture and mix until everything is evenly coated.

Press mixture into your pan. The bars should be about 3/4″ thick. If you’re using a full-sized jelly roll pan like me, just press it all to one side. Press firmly – the tighter you pack this, the more solid the bars will be.

Let the bars cool, cut into bars and wrap in wax paper or plastic wrap. Enjoy!
